Ingredients  

For the Cake

  • 4 Large Eggs
  • 1 cup Granulated Sugar
  • 1 cup Full Fat Cottage Cheese
  • 1 tsp Vanilla Extract
  • 1 1/2 cups All Purpose Flour
  • 2 tsp Baking Powder
  • 1/4 tsp Salt

For the Milk Soak

  • 1 can (12 oz) Evaporated Milk
  • 3/4 cup Sweetened Condensed Milk
  • 1/2 cup Full Fat Cottage Cheese
  • 1/2 cup Whole Milk

For the Topping

  • 1 1/2 cups Heavy Cream
  • 3 tbsp Powdered Sugar
  • 1 tsp Vanilla Extract
  • 1/2 tsp Ground Cinnamon

Instructions 

  • Preheat the oven to 350 F and grease a 9x13 inch pan. Blend the cottage cheese for the cake until completely smooth.
  • Beat the eggs and sugar with a mixer for 4-5 minutes until pale and fluffy, then beat in the blended cottage cheese and vanilla.
  • Gently fold in the flour, baking powder and salt just until combined, then pour the batter into the pan.
  • Bake for 25-30 minutes until golden and a toothpick comes out clean. Cool for 15 minutes.
  • Blend the evaporated milk, condensed milk, cottage cheese and whole milk until completely smooth. The cottage cheese makes the soak extra creamy.
  • Poke holes all over the cake with a fork, then slowly pour the milk soak over the whole cake so it soaks in evenly.
  • Cover and chill for at least 4 hours, or overnight for the best texture.
  • Whip the heavy cream with the powdered sugar and vanilla until soft peaks form, spread over the cake and dust with cinnamon before serving.
