Ingredients  

  • 1 cup Full-Fat Small-Curd Cottage Cheese
  • 1/4 cup Warm Water
  • 2 1/4 tsp Instant Yeast
  • 1 tsp Honey
  • 2 3/4 cups White Whole Wheat Flour
  • 1 tsp Fine Sea Salt
  • 2 tbsp Olive Oil

Instructions 

  • Blend the cottage cheese and warm water until smooth. Stir in the instant yeast and honey, then let the mixture stand for 5 minutes.
  • Combine the whole wheat flour and salt in a large bowl. Add the cottage cheese mixture and 1 tablespoon of the olive oil, then stir until a shaggy dough forms.
  • Knead the dough for 6 to 8 minutes, until smooth and slightly tacky. Add only a light dusting of whole wheat flour if the dough clings heavily to the work surface.
  • Coat a clean bowl with the remaining olive oil. Add the dough, cover, and let it rise in a warm place for 60 to 75 minutes, or until nearly doubled.
  • Preheat the oven to 475 F with a baking sheet inside. Press the dough into a 13-inch circle on parchment paper and let it rest for 10 minutes.
  • Transfer the parchment and dough to the hot baking sheet. Prick the center of the dough several times with a fork, leaving a 1-inch border untouched.
  • Bake for 6 to 7 minutes, until the surface is dry and beginning to brown. The crust is then ready for toppings and a final 7 to 10 minutes of baking.
