From my experience, if your bananas aren’t ripe enough yet, you can speed things up by baking them in their peels at 300 degrees F for about 15 minutes until the skins turn black.
Blend the Cottage Cheese Until Smooth
The cottage cheese needs to be blended well with the wet ingredients so you don’t get lumps of it in the finished bread. I use a blender or food processor and let it run until the mixture looks creamy and smooth.
