Preheat the oven to 350 degrees F. Coat a 9 x 5-inch loaf pan with nonstick cooking spray and line it with parchment paper.
Blend the cottage cheese, banana, eggs, brown sugar, melted butter, and vanilla until mostly smooth.
Whisk the flour, baking soda, baking powder, cinnamon, and salt in a large bowl.
Fold the cottage cheese mixture into the dry ingredients just until combined. Fold in the toasted walnuts, reserving 2 tablespoons for the top.
Spread the batter in the prepared pan and sprinkle with the reserved walnuts.
Bake for 52 to 60 minutes, until the top is caramelized and a tester inserted into the center comes out with a few moist crumbs. Cover loosely with foil if the top browns too quickly.
Cool in the pan for 20 minutes, then transfer to a wire rack and cool for at least 1 hour before serving.
