Avocado toast is a classic breakfast, but it can sometimes feel a bit light on its own.
That is why I love making this cottage cheese protein whipped avocado toast.

Blending cottage cheese right into the ripe avocado changes everything. It turns the spread into a super light, airy cream that spreads easily over crispy bread.
It also gives the toast a mild, fresh taste that balances the rich avocado perfectly.
Since it uses eggs and cottage cheese, this recipe is high protein and will easily keep you full all morning.
Why I Love This Recipe
High in Protein – With eggs and blended cottage cheese, this toast delivers serious protein to keep you full for hours.
Ultra Creamy Texture – Whipping cottage cheese with ripe avocado creates an airy spread that feels like pure velvet on toast.

Sweet and Spicy Kick – The drizzle of hot honey balances the rich spread with the perfect touch of sweet heat.
Perfect Jammy Eggs – The six-minute eggs add a rich, runny yolk that makes every single bite taste amazing.

Quick Tips
Time Your Eggs Carefully
You’ll get the best results if you start with cold eggs straight from the fridge and gently lower them into water that is already boiling. This sudden temperature change makes them much easier to peel cleanly later.
Keep a timer running for exactly six and a half minutes so the yolk stays soft and jammy without turning solid.
Once the timer goes off, transfer the eggs straight to an ice bath. Leaving them in the icy water for a full three minutes cools them down fast and keeps them from overcooking.
Blend Long Enough to Remove Curds
I recommend blending the cottage cheese and avocado for at least a full minute or two, pausing once to scrape down the sides of the bowl.

Cottage cheese curds take a little extra time to break down, but the spread turns amazingly light and fluffy once they do.
This creamy mixture turns your morning toast into a wonderful high-protein breakfast, and blending it completely smooth gives it the silky texture of rich cream cheese.
Toast the Sourdough in a Skillet
From my experience, toasting the sourdough in a hot skillet with olive oil gives you a much better crunch than using a pop-up toaster.
The whipped avocado topping and juicy cherry tomatoes add a lot of moisture. A firm, crunchy crust is essential to keep the bread from getting soft and soggy underneath.
Let the bread turn deep golden brown on both sides so it stays crisp under the weight of the toppings.

Quick Answers
Can I make the whipped avocado spread without a food processor?
Yes, a standard personal blender or an immersion stick blender will easily whip the avocado and cottage cheese until creamy.
You can also mash everything thoroughly with a fork, though the spread will have a chunky texture rather than a smooth, whipped consistency.
