  • 2 Very Ripe Bananas
  • 2 Large Eggs
  • 1/3 cup Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1 1/2 cups Rolled Oats
  • 1/2 cup Oat Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Ground Cinnamon
  • 1/4 teaspoon Fine Salt
  • 1/2 cup Mini Chocolate Chips

Instructions 

  • Preheat the oven to 350 F and line an 8-inch square baking pan with parchment paper.
  • Blend the cottage cheese, bananas, eggs, maple syrup, and vanilla extract until smooth.

  • Pour the blended cottage cheese mixture into the dry ingredients and stir until combined. Fold in the chocolate chips.
  • Spread the batter evenly in the prepared pan and bake for 25 to 30 minutes, until the center is set.
