Ingredients  

  • 1 1/2 cups Low-Fat Cottage Cheese
  • 2 Large Eggs
  • 1 medium Ripe Banana
  • 1 cup Old-Fashioned Rolled Oats
  • 1/4 cup Natural Peanut Butter
  • 1/4 cup Pure Maple Syrup
  • 1/4 cup Unsweetened Cocoa Powder
  • 1 tsp Baking Powder
  • 1 tsp Vanilla Extract
  • 1/4 tsp Fine Sea Salt
  • 1/3 cup Dark Chocolate Chips

Instructions 

  • Preheat the oven to 350 F and lightly grease an 8-inch square baking dish.
  • Blend the cottage cheese, eggs, banana, peanut butter, maple syrup, cocoa powder, baking powder, vanilla, and salt until smooth.
  • Add the rolled oats and blend for 10 seconds, just until some of the oats are broken down but the mixture still has a little texture.
  • Stir in half of the chocolate chips and pour the batter into the prepared baking dish.
  • Sprinkle the remaining chocolate chips over the top.
  • Bake for 28 to 32 minutes, until the center is set but still slightly soft.
  • Cool for 10 minutes before slicing so the baked oats become fudgy and tender.
